Dr. Thomson’s love for nutrition spread well beyond his creation of Superthrive.  He continuously gave people nutritional advice and developed his own vitamin supplement for people, Protectalllife.  He even tried his hands at opening a health food store for one year in the late 60s.
To keep in line with Dr. Thomson’s advice, here are 8 summer fruits and vegetables to maximize your nutritional intake throughout the season:
  1. Watermelon – Juicy and refreshing, watermelons are a perfect source for antioxidants such as vitamin C
  2. Raspberries – Perfect to add to breakfast or as a frozen yogurt topping, raspberries are rich in fiber and ellagic acid which is a phytochemical that helps prevent cancer.
  3. Blackberries – A go-to summer snack, blackberries are full of antioxidants and fiber, with just the right amount of tart and sweet.
  4. Peaches – A refreshing summer favorite, peaches are a great source of vitamin C and A, plus they are low in saturated fats and sodium.
  5. Zucchini – Yes, you read that correctly, zucchini… whether enjoyed during breakfast with poached eggs or during dinner with rice and beans, zucchini is an excellent source of antioxidants that are beneficial for eye health.
  6. Corn – Summer is not complete without a fresh sweet cob of corn!  Filled with the antioxidants, lutein and zeaxanthin, corn helps form a macular pigment that filters out damaging sun rays.
  7. Tomatoes – The perfect addition to a salad or even just to enjoy alone, tomatoes help act as a natural barrier to sunburn.

  8. Cucumbers – Perfect to add in water or tossed in a salad, cucumbers keep you hydrated, flush out toxins, and are rich in magnesium, potassium, silicon, vitamins A,B, and C.
